EMBRACING A plant-based lifestyle over two decades ago remains one of the most impactful and life-changing decisions I have ever made.
My journey into vegetarianism was inspired by a profound spiritual awakening, anchored in the principle of ahimsa—non-violence toward all living beings. This philosophy has become a guiding force in my life, influencing how I nourish myself and approach the world.
Switching to a plant-based diet has been an exhilarating exploration, filled with endless opportunities to create innovative, delicious, and visually appealing vegetarian dishes. For me, cooking not only involves crafting meals that are wholesome and flavorful but also curating beautiful culinary experiences to share with others.
Every fruit, vegetable, herb, and grain holds its own distinct character, even when they may appear similar. Much like fine wine, their vitality and quality are influenced by factors such as the richness of the soil, the purity of the water, and the care given during their cultivation and harvest.
The transformative impact of a plant-based diet extends to physical health, mental well-being, and natural beauty. Below, I’ve highlighted some of its most notable benefits:
Physical Benefits
A plant-based diet supports heart health by providing fiber, antioxidants, and healthy fats that lower cholesterol, regulate blood pressure, and reduce the risk of heart disease. It aids in weight management, enhances digestion, prevents constipation, balances the microbiome, and helps lower the risk of diabetes, cancer, and obesity. Additionally, whole, unprocessed plant foods offer steady, long-lasting energy without the crashes associated with other diets.
Mental Benefits
Plant-based foods are rich in nutrients like magnesium, folate, and omega-3s, which are essential for serotonin production. These nutrients help alleviate anxiety and depression, protect brain health, enhance cognitive function, and regulate cortisol levels. By fostering relaxation, they promote emotional balance, mental clarity, and even provide protection against conditions like Alzheimer’s and dementia.
Beauty Benefits
Antioxidant-packed foods, such as vitamin C-rich citrus fruits, fight free radicals to reduce wrinkles and encourage a radiant complexion. Water-dense foods like cucumber and watermelon help keep the skin hydrated and soft. Nutrients like biotin, zinc, and vitamin E—found in ingredients such as avocados, nuts, and seeds—strengthen hair and nails.
Additionally, berries, turmeric, and leafy greens reduce acne, redness, and irritation, while collagen-boosting foods like sweet potatoes and broccoli, along with carotenoid-rich produce, protect the skin from UV damage, helping to slow visible signs of aging.
While a plant-based lifestyle revitalizes and heals the body and mind, it also plays a vital role in reducing our ecological footprint and preserving natural resources.
Awareness of the benefits of a plant-based diet is growing worldwide, driven by its health advantages and increasing concern for animal welfare. This shift has led many to explore plant-based nutrition as a more conscious and sustainable way of living.
On March 31, The Manila Hotel took a bold step forward, unveiling the first-ever “plant-based fine dining” program in the Philippines – championed by its distinguished president Joey Lina, a former senator. This makes them the country’s pioneering hotel in offering an exquisite multi-course dining experience centered entirely around plant-based cuisine—a concept I was thrilled to exclusively design for them.
These remarkable dishes are not only a feast for the eyes but also an unforgettable culinary adventure. It’s an experience that everyone, including non-vegans, should try at least once.
Namaste.
