Longganisa takes center stage in Cabanatuan’s 60th founding day

    CABANATUAN CITY – Longganisa once again took the center stage on Tuesday as Cabanatuan City celebrated its 60th founding anniversary.

    This as Malacanang declared February 3, the culmination of the week-long affair, a special non-working holday in the city, the trade and education center of Nueva Ecija.

    Mayor Alvin Vergara said the Longganisa Festival, heavily attended by meat traders, consumers, as well as local officials and spectators was in support of the industry which gives both economic and tourism upliftment to the city.

    Held at the vicinity of the public market along Paco Roman St., the Longganisa Festival was highlighted by cooking contest and the variety of preparations for longganisa, including spaghetti and binagoongan (salted).

    “It was the third year the festival was conducted,” said Vergara.

    A group of meat vendors who called their group as “Babuyita Dancers” performed a longganisa -nspired number to the tune of the election-instructional song “May Bilog na Parang Itlog” of the popular Sexbomb dance group.

    Vergara said among the favorite longganisa preparations were batutay, longganisang bawang and longganisang matamis.

    Vergara thanked participants for the success of the festival “despite calamities that nearly crippled” the agriculture sector late last year.
