AMONG THE multitude of restaurants in Clark, Brigade de Cuisine (BDC) stands apart. At its core, owner Ellen de Leon loves to cook, honing her techniques and recipes for years to develop a unique menu with each dish exquisitely prepared one at a time, for the diners to return for more.
BDC invites diners to delve into a mixture of Korean and Filipino culture, with all the aesthetics and concept through a multi-sensory experience that is both enlightening and deeply enjoyable, especially over sweet crafted beer.
“When we arrived here in Sun Valley Resort there is no restaurant available in the area so we saw the opportunity to put up a resto bar inside the resort that will cater to both Korean and Filipino diners,” said Karylle Antoinette “Anton” de Leon, BDC’s social media manager.
BDC gives a memorable atmosphere for diners to unwind and loosen up after work with friends or family bonding. Elegant indoor and al fresco dining perfect not only for business meetings but also for family gatherings or events.
“BDC stands for Brigade de Cuisine, meaning kitchen staff, so here we pay tribute to all our staff and chefs – the reason why and how we serve our customer right with delicious and high standard for food quality, and we make certain that every guest receives the same level of service with every meal,” Anton shared.
At our dinner, we started off with Kimchi soup, a play of spicy and sour hot soup punctuated by bold kimchi flavor. From Korean to Filipino and vice versa, came platters of delicious Pork Tofu and favorite Rosemary Pork Belly. Despite the stark presentation, the next course, Chicken dishes – Soy Chicken, Yangnyeom and Chicken BBQ are best sellers. To complete the meal, Jeyuk Bokkeum (pork belly with spicy sauce) or Sisig is perfectly paired with BDC beer below zero.
