Swissotel Clark welcomes new head chef of Ristorante di Verona

CLARK FREEPORT – “I always try to keep the flavors of Italy in every dish. But it’s also important for me to celebrate what’s local. That’s how you create something that feels both familiar and new—a real Italian experience with a Filipino soul.” 

Thus, Chef Giampaolo Chinellato, new head chef of Ristorante di Verona,  

shared his culinary philosophy during the Discuss WidUs media forum of the Central Luzon Media Association-Pampanga Chapter on June 20. 

Ristorante di Verona is Swissotel Clark’s signature Italian restaurant and the only one of its kind in the freeport offering an authentic Italian fun-dining experience. 

Over 37 years of experience in hospitality has not only sharpened but more so flavored, so to speak, Chef Giampaolo’s food philosophy in world-class kitchens throughout Southeast Asia and Europe, including myriad roles in prestigious hotels and Michelin-starred restaurants. While this is his first time in the Philippines, he has quickly grown to admire the country for its vibrant culture, welcoming people, and rich culinary traditions. Indeed, so smitten is he with the nation that he married a Filipina, a Kapampangan at that.

“I am truly inspired by the Philippines. There’s a genuine warmth here, not just in the people, but also in the way food brings people together,” enthused Chef Giampaolo during the Discuss WidUs forum, where he proved his self-description as a “story teller,” that is through dishes that reflect the heart of Italy, enhanced with touches of Filipino flavor.

 

Authentic Italian Roots, Local Inspiration 

At the core of Chef Giampaolo’s vision for Ristorante di Verona is a menu that stays true to classic Italian recipes, yet embraces the use of locally sourced ingredients. His new creations are guided by the belief that true Italian cuisine is not about complication—it’s about quality, simplicity, and authenticity.

Guests can expect to find signature regional Italian dishes, including handmade pastas and slow- cooked sauces, carefully prepared with traditional techniques and a passion for detail. Among his personal favorites on the menu are pasta dishes made from scratch, paired with carefully selected grappa—Ristorante di Verona boasts one of the largest grappa selections in the area, offering a unique and complete Italian dining experience.

Chef Giampaolo’s love for cooking began early. At just six years old, he found joy in preparing simple meals in his family’s kitchen. He later formalized his craft, enrolling in culinary school and starting his professional journey in 1989. 

Now, decades later, that same childhood passion still fuels his work. And in Clark, he discovered a new stage to share that joy—with locals and international guests alike.

“When guests dine at Verona, I want them to feel like they’ve been transported to Italy,” he says. Among the exciting developments under his leadership is the launch of pasta-making classes at Ristorante di Verona—a warm, hands-on experience open to guests who want to learn the basics of fresh pasta preparation from an authentic Italian chef.

Food & Beverage Beyond Ristorante di Verona 

In the same Discuss WidUs forum, Swissotel Clark’s Cluster Director of Food & Beverage Eric Norbert shared his enthusiasm for the direction the restaurant is taking. 

“We’re seeing a more refined touch in the dishes and presentation at Ristorante di Verona, thanks to Chef Giampaolo’s leadership,” says Norbert. “But this is just the beginning. There’s a lot more coming in the next few months.” 

Norbert, who oversees 17 outlets across Swissotel Clark and Widus Hotel Clark, is passionate about evolving the dining experiences across both properties. From Salt Resto’s traditional Filipino cuisine to Markt’s international buffet and Oma’s pastries and cakes, there is something to satisfy every craving. 

Swissotel Clark’s all-day dining restaurant, Markt, is also set to offer themed buffet nights, with special seafood offerings sure to bring in not just hotel guests, but food lovers from surrounding areas.

“Our goal is simple—no one should leave the property unhappy,” says Norbert. “This is our goal, make everybody smile and have a good time through good food and good wine.”

With the introduction of Chef Giampaolo Chinellato, Ristorante di Verona further solidifies its place as the premier Italian dining destination in Central Luzon. The menu is growing, the energy is fresh, and the passion for hospitality is palpable.

“I’m ready to bring a new touch of Italian cuisine here in Clark,” says Chef Giampaolo. “It’s an honor to serve, to share, and to welcome you all to taste a little piece of Italy—right here at Verona.” 

Ristorante di Verona is located at the 5th floor of Swissotel Clark, and is open daily from 11:30 am to 10:30 pm every Monday to Saturday, and 10:00 am to 10:30 pm during Sundays. Punto Lifestyle Team/PR
