CLARK FREEPORT — An evening where culinary craft becomes a language of memory, movement, and meaning becomes September 11 here, with ESTOS Clark launching KOBO — an intimate tasting experience of a five-course meal that brings together the quiet discipline of Japanese tradition and the exacting finesse of French technique.

At its center is Chef Al Fernando, whose evolving culinary journey finds new expression through a menu built on precision, restraint, and reverence for the craft.
Half of the proceeds from KŌBŌ will be dedicated to supporting families affected by the recent flooding in Guagua — a community deeply woven into the story of ESTOS, and one that has been part of its journey since the very beginning.

For Chef Al Fernando, this is a return to his roots in more ways than one. It is a reminder that the most meaningful food is never only about what is placed on a plate. It is about the people behind it, the places that shaped it, and the communities that give it purpose.

This September to November, the table becomes a point of connection — between cultures, techniques, people and purpose.
